I created Pizzoun based on how exactly I imagined a perfect pizza.

I had a big plans. I wanted to open multiple stores. I wanted to have employees who will be running the stores as owners.  But I wasn’t able to find employees who would be able support such vision. It was my mistake. As an mostly absentee owner. I couldn’t spend enough time in the store.  I got frustrated when I saw how hard it is to keep simple things operational (keep the phone charged, don’t change recipe without letting anyone know, don’t change portions of ingredients, which I spent months to determine, come to work on time, count the cash correctly,  make photos for social media when not busy, heat up the oven correctly, don’t quit in the middle of the shift without telling anyone,…).

Restaurant business is incredibly tough. I was naive. Very naive. I though that people who work in restaurants have love for the food. Certain pride. That teaching them the business principles will help me to make profitable and efficient business operation. It needs much more time, resolve and effort then I ever imagined.

I also thought that having organic quality ingredients is very important. It is important to me personally. When I cook at home I only use what I find at Farmer’s market  and ideally what was grown using organic principles.  I felt that we need to start changing how we eat, what we eat, where we get the ingredients, how the ingredients are processed, what chemicals are added or not added… Now I think for most of the customers it is not as important as I thought.

Sorry to disappoint the few which shared my vision. The ones who liked the food the way we cooked it. The thin crust. The organic ingredients. The balanced portions of ingredients. Maybe one day I can invite you in my house and make even better pizza for you in my backyard wood fired oven.:-) But the vision of having Organic Pizza restaurant is ending today.
